Slow-Cooker Steak Tacos with Mango Pico De Gallo

taco3It’s Taco night at Casa Fenton!  Slow-cooker steak tacos with mango pico de gallo; one of my fave dinners to make, and a big winner with the kids too, because they love the whole ‘build-your-own’ aspect, and I find that they get more excited about healthy eating when they participate in the process.  This recipe is super easy – all hail the slow-cooker – and the mango gives the salsa fresca a fruity twist (another win with the kids).  You can add variety by serving with lots of different toppings like sour cream, grated cheese, chopped lettuce, refried beans, or sliced avocado, so there is something for everyone.  Here is what you will need:

  • A pinch of cayenne
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 teaspoon chopped garlic
  • Salt & pepper
  • 1 Large sweet Onion
  • 1 Green Bell Pepper
  • 2 Jalapeños
  • 1 Mango
  • 3 Tomatoes
  • Fresh cilantro
  • 2 Limes
  • Grated cheddar / sour cream / selected toppings
  • Flour or corn tortillas
  • 2lb Flank steak or stewing beef.

Place the meat in the slow-cooker, and rub with cayenne, chili powder, cumin, garlic, and a pinch of salt and pepper, and sprinkle with lime juice (from one lime).  Cut your onion in half, and put one half aside for later.  Slice half into strips and add to slow-cooker, then add sliced green pepper, and 1 chopped jalapeño (seeds removed).  Cover and cook on low heat for 7 hours (stirring and/or basting once or twice half-way through).

taco2Chop the remaining half of your onion, the remaining jalapeño (seeds removed), your mango and tomatoes, and place them all together in a bowl.  Sprinkle with lime juice (from one lime), a pinch of salt, and 1-2 tablespoons of chopped fresh cilantro.  Mix well, cover, and refrigerate until ready to serve.  Mamas might enjoy this meal paired with an ice cold margarita… or perhaps one of these fresh summery cucumber cocktails 😉
