3 Refreshing Cucumber Cocktails to Keep You Cool This Summer

Whoever never thought that a vegetable could make your favourite cocktail so much sexier, has obviously overlooked the cool cucumber.  This underrated green goodness is not only rich in vitamins, folate, calcium, potassium and magnesium too, they are also 95% water, making them an awesome detox and hangover aid (ironic… right?).  But besides all those healthy excuses, they actually might taste borderline orgasmic (in that thirst quenching way), while soaking in some of our go-to summer spritzers.  So have a slice and mix things up with these 3 refreshing cucumber cocktails (and please enjoy responsibly):

cucumber.collinsCucumber Collins

  • 6 Cucumber Slices
  • 1.5 oz Gin
  • 1 oz Lemon Juice
  • 0.5 oz Simple Syrup
  • 3 oz Soda Water
  • 3 Mint Leaves

-Muddle the cucumber slices, lemon juice and simple syrup.
-Add gin and excess ice, then shake.
-Strain over ice into a glass, then top with soda water.
-Garnish with mint and/or a slice of cucumber.

Cucumber Mojito


  • 6 Cucumber Slices
  • 1.5 oz White Rum
  • 5-10 Mint Leaves
  • 3 oz Soda Water
  • 0.5 oz Simple Syrup
  • 1 oz Lime Juice

-Muddle the cucumber slices, mint, lime juice, and simple syrup.
-Add rum and excess ice, then shake.
-Strain over ice into a glass, then top with soda water.
-Garnish with mint leaves and/or a slice of cucumber


Cucumber Melon Sangria

  • 750 ml bottle of sparkling white wine (Prosecco or Champagne)
  • 750 ml ruby red grapefruit juice
  • 1 large cucumber, half sliced, half muddled
  • half a watermelon, balled or cubed
  • 1 cup frozen strawberries
  • pitcher 1/4 filled with ice

-Peel and muddle half of the cucumber, and pour into pitcher.
-Add cubed melon, frozen berries, remaining cucumber slices (and any other fresh melon or fruit selections… like peaches or pears perhaps).
-Pour equal parts sparkling wine and grapefruit juice into the pitcher.
-Stir and serve over ice, garnish with mint leaves.
