Oatmeal Peanut Butter Chocolate Chip Energy Balls

Whether you are looking for a gluten-free, no-bake, kid-friendly, mom-approved snack, a protein-packed boost before you hit the gym, or a simple grab-and-go treat to get you through the long work-day, this easy recipe is a delicious solution.  Peanut allergy?  No problem.  You can substitute the PB with any nut or seed butter.  In fact, you can customize and tailor your energy balls to suit your nutritional needs with other healthy additions such as chia seeds, hemp hearts, raisins (or your favourite dried fruit bits), and even the honey can be replaced with agave syrup.  These guilt-free goodies can be stored in the fridge for up to 7-10 days.

Energy Balls:

1 Cup Old-fashioned Oats

1/2 Cup Ground Flax

2/3 Cup Shredded Coconut

1/2 Cup Semi-Sweet Chocolate Chips

1/2 Cup Raw Honey

1/2 Cup Peanut Butter

1 Tsp. Vanilla Extract

Mix ingredients well, cover and refrigerate for 30 min.

Shape into 1-inch balls.  Enjoy!
